This dish has different versions depending on which region of Vietnam it’s being served, and the pancake’s size can vary significantly. The one we had in Hoi An included a pancake the size of a dessert plate, as well as rice paper, pickled cabbage, skewers of chicken and pork, a ton of herbs (yes!), small fried spring rolls and some awesome peanut sauce you will never forget. Oh, and chilli sauce, of course.
The way this goes is.. grab a rice paper sheet (in some places this one needs to be made wet and soft first, with water) and roll up the Bánh Xèo, chicken/pork or a spring roll, herbs and the cabbage. After that, just dip it in the delicious peanut sauce and pray the whole thing doesn’t fall apart before you can put it in your mouth. And there you go: bliss and joy is now yours. Go ahead and pat yourself on the back. You deserved it.
